The Venetian Spritz

For much of the world it is a cocktail. For Venetians, it is simply aperitivo.

In Venice, a Spritz is not something reserved for special occasions. It is the aperitivo drink: the one that accompanies a chat, a stop at a bàcaro and, almost inevitably, a few cicchetti.

Where it comes from

The name is generally linked to the German verb spritzen, “to spray”, and to the period of Austrian presence in Veneto, when local wine was lightened with water. Over time, that simple habit evolved into the modern Spritz, now one of the most recognisable symbols of the Italian aperitivo.

How it is made

There is no single Venetian version. The basic structure is simple: sparkling wine or Prosecco, a bitter component and a splash of soda or seltzer, served with ice and a garnish. What changes most is the bitter you choose.

Aperol, Select, Campari or Cynar?

Aperol is softer and more citrusy; Select is strongly connected with Venetian tradition; Campari is more assertive and bitter; Cynar brings characteristic herbal notes. In Venice, being asked “which one do you want it with?” is part of the ritual.

Spritz and cicchetti

The Spritz is naturally at home beside cicchetti: small counter bites chosen according to what the bàcaro has prepared. There is no need to build a menu—have a drink, one or two cicchetti and continue your walk.
